Tastes Like Summer Meatballs

Spring is FINALLY here! I am so relieved, but having been craving Summer and so has my son. Green grass, playgrounds, grilling, all signs of classic Summer. Although we have yet a few more months until that glorious season, there is no reason we can't trick our mouths into thinking it is Summer?

Last week I made mini meatballs for my son and I. He ate them with his current favorite food- spaghetti, and I put mine into a salad for a creative twist on salad! The meatballs were insanely easy to make (you'll have to excuse my lack of pictures, I am waiting on a new camera and phone) and the entire meal was made in less than 30 minutes.

Grilled Mini Meatballs
1 LB Ground Sirloin
1/2 onion finely diced
Salt
Pepper

Mix your meat together and preheat a grill pan. Each meatball should be about 1 tsp, yep these are small! Roll your meatballs and grill. The cooking time on these little guys are about 5-7 minutes total!!

As I said above, my little guy ate these as is with some pasta and sauce.

The rest of the meatballs I added 1 cup of shredded cheddar cheese on top of the hot meatballs so the cheese melted.

In a large bowl mix a bag of Italian Blend salad, 1 cup of cherry tomatoes, 1/4 cup of chopped dill pickles, and 1/2 cup diced bacon. Add your meatballs and toss with your thousand island dressing! Yes, that is BBQ in a salad!!!

I ate it all week. My son even ate the salad. The meatballs really remind you of the taste of the grill and taste more like a hamburger rather than meatballs.

Now... if only Summer would actually come to New York.
