So many times when we as adults are trying to "cut calories" we eat cauliflower instead of potatoes, and its a good fakeout for us, but what about combining cauliflower and potatoes for your baby, you could also easily serve this for your entire family as a side dish with dinner!!
I find that the best way to get the awesome intense flavor out of cauliflower is to roast it.
Preheat your oven to 375
Put your cauliflower and sweet potatoes on a baking sheet
Pour some olive oil, salt, and pepper to taste over these and roast for about 30-40 minutes depending on your oven.
Puree until smooth and serve to your little one! I like to sprinkle in a few fresh time leaves into the blender also, this brings out a lot of really great flavors.
